Kolkata is the paradise for various varieties of street foods.In almost each and every single street of Kolkata you can find these street foods are selling by hawkers and vendors in small store or in roadside food carts.
Kolkata style mixed chow-mein is most famous street food of them.Chow-mein actually is a Indo-Chinese stir fry noodles cooked with lots of veggies & chicken/egg/prawn & mixed with flavorful sauces.
Indians adopted these Chinese recipes from Chinese cuisines and modified them in their own way that’s why we call it “Indo-Chinese”foods.
I always prefer to make my chow-mein recipe with veggies,egg and chicken,sometime prawn too.But you can add other meats too.

Here Is The Kolkata Style Mixed Chow-mein Recipe Below :
Ingredients For Making Kolkata Style Mixed Chow-mein:
•Hakka noodles - 6 packs
•Chicken cubes - 1 cup
•Eggs - 2
•Chopped garlic - 1 tsp
•Onion - 1 medium (finely sliced)
•Capsicum - 1 cup (finely sliced)
•Carrot - 1.5 cup (finely sliced)
•Green beans chopped - 1 cup
•Shredded cabbage - 1/2 cup
•Spring onion chopped - 1/2 cup
•Green chillies chopped - 1 tsp
•Soya sauce - 2 tbsp
•Red chili sauce - 1 tbsp
•Green Chili sauce - 1 tbsp
•Tomato sauce - 1 tbsp
•Vinegar - 1 tbsp
•Crushed black pepper - 1/2 tsp
•Ajinomoto - 1/2 tsp (optional)
•Vegetable oil - 2 tbsp
•Salt to taste
For Making The Chicken Fry :
•Cornflour - 1 tbsp
•Ginger garlic paste - 1/2 tsp
•Crushed black pepper - 1 pinch
•Soya sauce -1/2 tsp
•Salt as per taste
•Chili flakes - 1/2 tsp
•Oil for chicken fry - 2 tbsp
Method:
•Heat water in a pan add noodles, little vegetable oil and salt into it.Boil noodles for 5 minutes or until tender.
•Pour boiled noodles in a strainer,rinse it with running cold tap water & keep aside for few minutes to drain off excess water.
•Now heat some oil in a pan,beat 2 eggs in a bowl with black pepper powder and salt (as required) and fry them as scrambled egg and keep them aside.
•Now Marinate the chicken with ginger garlic paste,soya sauce,cornflour,chili flakes,crushed black pepper & salt.
•Heat the oil (as required for chicken fry) in a pan and fry the marinated chicken and keep them aside.
•Now in another big pan or wok heat some oil add chopped garlic,saute them for a while and then add onions,all vegetables & salt as required and fry them till soften.
•When the vegetables become soft add black pepper,boiled noodles,soya sauce,red chili sauce,green chili sauce,tomato sauce,vinegar,chopped green chillies,ajinomoto(optional) and stir fry for 2-3 minutes.
•Now add scrambled eggs & fried chicken & spring onions and give a nice mix.Add salt & pepper if needed & fry it in high heat for 2-3 minutes.
•Switch off the Oven and transfer it on a plate,sprinkle some onion,green chili & cucumber salad (optional) over it and serve it hot.
