Delicious,tender & juicy chicken malai kebabs are very easy to make starter recipe,actually belongs to Mughlai Cuisines.In this recipe boneless chicken pieces are marinated in cheesy spice mix yogurt and cream & then grill it in oven.
This kebab recipe is little different from other kebabs.The specialty of this kebab is that in this recipe chicken are marinated with mozzarella cheese,yogurt,fresh cream and very mild spices,so that it gives a cheesy mild spicy in taste & creamy in texture.
In restaurants malai kebabs are grilled in tandoor over charcoal,It gives a nice smokey flavor in kebabs but in home charcoals are not available in all time so I made it in oven.
Ingredients For Making Chicken Malai Kebab:
•Boneless chicken thighs - 400 gm (cut into cube size)
For 1st Marination:
•Ginger paste - 1 tbsp
•Garlic paste - 1 tbsp
•Crushed white pepper - 1 tsp
•Lemon juice - 1 tbsp
•Salt as per taste
For 2nd Marination:
•Shredded mozzarella cheese - 1/2 cup
•Green chili paste - 2 tsp
•Chopped coriander leaves - 1/2 cup
•Garlic powder - 1 tsp
•Cardamom powder - 1/2 tsp
•Cashew paste - 2 tbsp
•Hung curd - 3/4 cup
•Fresh cream - 2 tbsp
•Garam masala powder - 1 tsp
•Chaat masala - 1 tsp
•Melted butter - 2 tbsp or as required
•Vegetable oil - 2 tbsp or as needed
•Salt as per taste
Other equipments:
•Wooden or Metal skewers
•Oil greasing brush
Method:
•At first wash the chicken well,cut it into cube size pieces and pat it dry with paper towels.
•Now take a large bowl add chicken pieces into it.Add ingredients mentioned in above for 1st marination (lemon juice,ginger paste,garlic paste,salt,crushed white pepper) accordingly in to the bowl & mix it well.
•Cover the bowl with lid & keep it into the fridge for 30 minutes.
•Meanwhile make green chili paste and cashew paste separately in the mixer grinder.
•Now take another bowl add all ingredients mentioned in above for 2nd time marination except melted butter (mozzarella cheese,green chili paste,garlic powder,hung curd,coriander leaves,cardamom powder,cashew paste,fresh cream,garam masala powder,chaat masala ,oil,salt as per taste) in to it & mix it well .
•Take out the chicken from fridge pour the new yogurt spice cheese mixture over chicken and give a nice mix all together.
•Again cover the bowl with lid and keep it into the fridge again for overnight or at least 2-3 hours.
•If you are using wooden skewers,before using soak them in water for at least 1 hour to avoid skewers burning.
•Before make the kebab preheat the oven in 400 degree F.
•String the chicken pieces on skewers,grease them with melted butter and place them on parchment paper lined baking tray .
•Now place the tray in oven and grill it for 40 minutes or until cooked properly.
•Keep turning the stick and cook each side evenly until the chicken cooked nicely and get light golden in color.If needed brush the chicken with some oil or butter.
•Malai kebabs are ready now.Transfer it onto the plate and sprinkle some lemon juice over the kebab,serve it with onion salads and coriander mint chutney or any other dips of your choice or serve it with pita bread or naan as a full meal.
