Fried Mango Raisin Ice-cream

Mango -The king of the fruits have lots of health benefits.It helps to boost our immunity system.Every year we are waiting for this summer season to get these yummy Mangoes.
Fried Ice cream is one of my favorite dessert.So this year I tried this recipe in my kitchen with Homemade Mango Ice-cream.Fried Ice cream actually is a quick fried Crunchy bread coated ice cream dessert.This dessert will treat your taste buds an ultimate burst of flavor.
To make this mango ice cream I used ripe mangoes,condensed milk,whipping cream, raisins,vanilla extract & then scooped out & coated one by one with the breads and deep fried them in to the oil.
Have you made this recipe at your home yet? If not try this recipe once in your home with the Ice cream of your choice.I made this recipe from scratch.But you can make this recipe with store bought Ice-cream instead of making ice cream at home.

Ingredients:
Ingredients for making Ice Cream:

4 - Ripe alphonso mangoes,chopped
1/2 cup - Sweetened condensed milk
1 tsp - Vanilla extract
2.5 cup - Heavy whipping cream
1/2 cup - Chopped mangoes
1 tbsp - Raisins
For Fry The Mango Ice Cream:

8 - Bread slices
Oil as required for deep fry
Others:
------------------------------------------
Food Processor/ Mixer
Plastic wrap
Ice cream scoop
Hand blender
Mint leaves & chocolate syrup for garnishing
Wooden roller pin and board

Steps:
•Peel and slice the mangoes.Then blend them in food processor or Mixer and make smooth pulp.

•Add chilled whipping cream to a bowl.whisk the cream until get stiff peak.

•Add sweetened condensed milk,vanilla extract,mango pulp and whisk until well combined.


•Lastly add raisins & chopped mangoes mix well and transfer the mixture into the air tight container and freeze overnight until firm.

•Take out Mango ice cream from the refrigerator.Scoop out medium size balls of ice cream and place on a muffin tray or any plate or tray & cover with plastic wrap and freeze them until harden.


•Now cut the crust off the breads.And by using rolling pin and board roll out all the breads to flatten.


•Now place one bread slice on the top of the plastic wrap,add one ice cream ball on the top of the bread & cover the ice cream ball with another slice of bread.


•By using with your hands press the bread around the ice cream & shape it like bread ball.Wrap the full thing in the plastic wrap tightly. Do the same process with the remaining breads & ice cream balls.And freeze them again for at least 4-5 hours.


•Now heat the enough oil in a pan or wok for deep fry the bread ice cream balls.When oil becomes hot enough,one at a time fry the bread ice cream balls for 10 - 20 seconds or until golden brown on all sides.Transfer them in a paper towel lined plate.

•Then transfer them into the serving bowls & garnish them with chocolate syrup and mint leaves and serve them immediately.
