Fulkopir korma (Cauliflower korma)

Cauliflower korma is a rich,delicious,aromatic vegetarian meal dish.This curry is goes perfectly as side with Rice,Parathas,Naan or Roti.
There are lots of ways of making korma recipes and they taste different depending on the ingredients used.
To make cauliflower korma recipe I generally use Coconut milk or paste,Curd,Melon seeds paste(Charmogoj),Tomato,Onion,Ginger,Garlic,Whole & Powder spices,Cashew nuts paste and Almonds paste.This coconut paste or milk,melon seeds paste,cashew and almonds paste gives this curry a thick creamy texture and rich in taste.
Try this recipe in your home,hope you will definitely like it.Instead of cauliflower you can make this korma recipe with Paneer,Mushroom,Tofu or Soya chunks too.
Ingredients For Making Fulkopir Korma (Cauliflower korma) :
•1 Cauliflower - Cut into medium pieces
•1/2 Cup - Green peas
For making onion tomato paste :
•1 Tomato - Chopped
•1 cup - Onion cut into cube size
•1 inch - Ginger
•3 to 4 - Garlic cloves
•4-5 no of - Green chillies
•1/2 cup - Cashew & Almonds (soak into lukewarm water)
•1 tsp - Melon seeds (Charmogoj) soak into lukewarm water
For tempering to the oil :
•1 inch - Cinnamon stick
•2 - Cloves
•3 - Cardamom pods
•1/2 tsp - Cumin Seeds
•1 - Dry red chili
•1 - Bay leaf
Powder spices:
•1 tsp - Kashmiri red chili powder
• 1/2 tsp - Turmeric powder
•1 tsp - Cumin powder
•1 tsp - Coriander powder
•1/2 tsp - Garam masala powder
Other ingredients:
•1 tsp - Kasuri methi (Dried Fenugreek Leaves)
•1 tbsp - Curd
•1 cup - Coconut milk
•Salt as per taste
•2 to 3 tbsp - Oil or as required
•1 tsp - Ghee
Method :
•At first take a bowl,soak melon seeds,cashew nuts & almonds into some lukewarm water for 15 minutes.
•Heat the oil in a pan,add cauliflower pieces,little salt and fry them until turn into light brown in color.Now transfer them in a bowl and keep aside.
•Now heat little oil in a pan and add onions,2 green chillies,garlic,ginger,soaked cashew nuts,almonds & melon seeds and Sauté them for 2-3 minutes.Then add tomato pieces and mix well and sauté for another 5 minutes.
•Turn off the heat.Transfer them into the mixer grinder and keep it aside till completely cool down.Now by adding some lukewarm water grind them into a fine paste.
•Now in the same pan heat oil as required and add cumin seeds,dry red chili,bay leaf, cinnamon stick,cloves,cardamom pods for tempering to the oil.
•When they starts splattering add the prepared tomato onion paste,Stir fry on medium heat until all the moisture evaporates from masala fully.
•Now add all powder spices like turmeric powder,cumin & coriander powder,kashmiri red chili powder add little water,salt to taste, mix well and fry for 2-3 minutes on low heat until raw smell goes off from masala.
•Now add beaten curd mix well and cook on medium heat for 2 minutes.
•When oil starts to separate from masala,add lukewarm water(on basis of gravy thickness) and cover the pan with lid and bring water to boil.
•When water starts boiling add fried cauliflowers,green peas & salt if needed and mix well and cook for 5 minutes on medium heat.
•Now add coconut milk and give a nice mix and cook for another 15 minutes or until gravy becomes thicker and cauliflower cooked well.
•Now add garam masala powder,kasuri methi,green chili slits and mix well & cook for 2 minutes.
•Finally add some ghee over the curry mix well and turn off the heat.
•Now Cauliflower korma is ready.Enjoy it hot with Rice or Roti or Naan or Parathas.
